• 500g 80/20 ground beef
  • 100g lean streaky bacon
  • 75g Doddington Darling Blue cheese, crumbled or grated
  • 1 Shallot,
  • 2 burger buns, toasted
  • Mayonnaise,
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced gherkins
  • Mustard of choice
  • BBQ Sauce or Tomato Sauce (suggestion: we use Dr. Will’s)
  • Salt and pepper to taste

Doddington’s Darling Blue Cheese Burger

  1. Finely chop the shallot and put into a bowl with the ground beef.  Season with salt and pepper and form into four equally sized burgers.
  2. Grill the bacon and set to one side.
  3. Grill the cut side of the burger buns.
  4. Put the burgers onto a hot griddle and press with a weight – we used a Victorian flat iron!
  5. Once cooked add your grated or crumbled Darling Blue cheese to the top of each burger and grill to melt the cheese.
  6. Add mayonnaise to the toasted side of the bun bases, add lettuce leaves and then a burger with its melted cheese.  Add another cheesy burger to the top of this.
  7. Top off with the bacon, and slices of tomato and gherkin.
  8. Spread the top of each bun with mayonnaise, mustard and Dr. Wills BBQ sauce before popping onto the burger buns.
  9. Use a skewer to hold them together
  10. Serving suggestion: why not add a side of hand cut chips, homemade slaw and an ice cold beer?
